摘要:
 分析每个产区不同品种的酿酒葡萄成熟果实中的主要矿质元素含量,为基于矿质元素的酿酒葡萄品种鉴别奠定基础。运用石墨原子吸收光谱仪和高分辨化学自动分析仪,对2014年和2015年新疆五家渠、山东烟台、云南香格里拉、陕西泾阳、宁夏玉泉营5个重要葡萄产区赤霞珠、蛇龙珠、美乐和霞多丽葡萄果实中的Fe、Mn、Zn、Cu、K、Ca、Na、Mg、N、P 等10种矿质元素含量进行分析,揭示酿酒葡萄品种对酿酒葡萄矿质元素含量的影响。结果表明,在云南香格里拉产区,Ca表现为2014年美乐(396.86±36.14 μg·kg-1)显著高于霞多丽(281.84±33.40 μg·kg-1),2015年美乐(336.71±8.48 μg·kg-1)与霞多丽(308.61±74.50 μg·kg-1)无显著差异;赤霞珠在2014年(200.35±14.99 μg·kg-1)与2015年(200.50±31.49 μg·kg-1)均表现最低水平。Ca在其他产区中的表现与云南香格里拉产区类似,对品种区分有明显表现。因此,Ca可作为区分葡萄品种的重要特征元素。
Abstract:
 To analyze the main mineral elements in ripen fruit in different producing areas to laid the foundation for the identification of wine grape varieties based on mineral elements.Graphite atomic absorption spectrometer and high resolution chemical automatic analyzer were used to analyze five important wine regions in 2014 and 2015,including Wujiaqu of Xinjiang,Yantai of Shandong,Shangri-La of Yunnan,Jingyang of Shaanxi,Yuquanying of Ningxia.The grape cultivars included Cabernet Sauvignon,Cabernet Gernischt,Merlot and Chardonnay grape fruit.Ten elements were analyzed to reveal the the influence of wine grape variety on mineral elements content in wine grapes,including Fe,Mn,Zn,Cu,K,Ca,Na,Mg,N,and P content of 10 kinds of mineral elements.In the Shangri-La region of Yunnan,Ca content in cultivar Merlot (396.86±36.14 μg·kg-1) was significantly higher than that of Chardonnay (281.84±33.40 μg·kg-1) in 2014.There was no significant difference between Merlot (336.71±8.48 μg·kg-1) and Chardonnay (308.61±74.50 μg·kg-1) (P<0.05) in 2015.Cabernet Sauvignon (200.65±14.99 μg·kg-1) in 2014 and Cabernet Sauvignon (200.50±31.49 μg·kg-1) in 2015 showed the lowest level (P<0.05).Ca in other areas was similar to Yunnan Shangri-La,which showed a significant performance between varieties.Ca could be considered as an important characteristic element to identify grape region and variety.
