摘要:
为探索水杨酸(SA)处理对板栗贮藏品质的影响,以"镇安"红栗为试验材料,采用不同浓度水杨酸水浴处理10 h,于0℃±1℃条件下贮藏,对板栗贮藏过程的腐烂率、水分含量、淀粉、还原糖、可溶性糖、可溶性蛋白质和Vc含量变化进行研究.结果表明:SA水浴处理可以极显著降低板栗贮藏的腐烂率.1 mmol· L-1SA水浴处理能有效保持板栗贮藏期间的水分、Vc和可溶性蛋白质的含量,降低淀粉和还原糖的降解速率,在一定程度上抑制板栗品质的降低.
