摘要:
 采用高效液相色谱法分离和测定了12个沙棘品种的果实可溶性糖和有机酸的组分及不同组分含量。结果表明:沙棘果实糖组分为果糖、葡萄糖和1种未知糖,以果糖和葡萄糖为主,其含量分别为30~652.7 mg·100 g-1和415.7~943.1 mg·100 g-1。沙棘果实的有机酸包括草酸、奎尼酸、苹果酸、维生素C和柠檬酸,以奎尼酸和苹果酸为主,其含量分别为776.9~2 024.4 mg·100 g-1和636.8~3 595.7 mg·100 g-1。12个沙棘品种的果实糖酸比介于0.1~0.9之间,HS-1果实的糖酸比=HS-14 >新俄3>阿尔泰=绥3>HS-15=绥1>2-36>首都=杂5-6>杂5-20>芬兰;12个沙棘品种的甜酸比介于12.2~110.6之间,HS-14果实的甜酸比>阿尔泰>绥3>HS-1>新俄3>HS-15>绥1>杂5-6>2-36>杂5-20>首都>芬兰。这可为沙棘不同品种的品质评价和合理开发利用提供了重要参考。
Abstract:
 The method of HPLC (high performance liquid chromatography) was used to test the compositions of soluble sugars and organic acids and their contents in the berries of 12 sea-buckthorn cultivars.The results indicated that the soluble sugars in fresh pulp included fructose,glucose and an unknown sugar,the fructose and glucose were the major sugars,with the contents 30.0-652.7 mg·100 g-1 and 415.7-943.1 mg·100 g-1,respectively.The organic acids in fresh pulp included oxalic acid,quinic acid,malic acid,vitamin C and citric acid,the quinic and malic acids were the major acids,with the contents of 776.9-2 024.4 mg·100 g-1 and 636.8-3 595.7 mg·100 g-1,respectively.The values of the ratio of sugars to acids ranged from 0.1 to 0.9 for 12 cultivars,was and in the order of HS-1=HS-14>Xinge3>Altay>Sui3>HS-15=Sui1>2-36>Capital>Hybrid 5-6>Hybrid 5-20>Finland.The values of ratio of sweetness to acids were from 12.2 to 110.6,and in the order of HS-14>Altay>Sui3>HS-1>Xinge3>HS-15>Sui1>Hybrid5-6>2-36>Hybrid5-20>Capital>Finland.These data may provide scientific basis for quality evaluation and effective utilization of sea-buckthorn germpalsm.
