摘要:
通过实际调查和测定,分析了西北地区4个不同产地文冠果种仁的营养成分。结果表明:文冠果种仁蛋白质含量为11.32%~18.20%,新疆喀什和青海循化种群蛋白质含量显著大于甘肃靖远和陕西延安种群;脂肪含量为54.06%~57.95%,陕西延安种群显著高于新疆喀什种群;总糖含量较低,且不同产地之间差异不显著。文冠果种仁氨基酸含量丰富,含有17种氨基酸,平均含量为25.30%,陕西延安和甘肃靖远种群含量较高,分别为27.75%和27.11%。文冠果种仁油中,亚油酸含量最高(40.92%~45.32%),其次是油酸(29.25%~31.25%)。陕西延安种群的亚油酸含量较高,显著高于其他种群;新疆喀什和青海循化种群的油酸含量较高,分别为31.25%和31.01%,但与其他产地之间无显著差异。
Abstract:
Nutrients of the seed kernel of Xanthoceras sorbifolia collected from 4 areas in Northwestern China were analysized. The results showed that the protein contents were from 11.32% to 18.20%. The protein contents in the seed kernel from Kashi of Xinjiang and Xunhua of Qinghai were significantly higher than those from Jingyuan of Gansu and Yanan of Shaanxi.The fat contents were from 54.06% to 57.95%. The fat content in the kernels fro Yanan of Shaanxi was significantly higher than those from Kashi. The proportion of the total sugar was low. The mean content of amino acid was 25.30%, and 27.75% and 27.11% were in the seed kernel from Yanan of Shaanxi and Jingyuan of Gansu, respectively. The proportion of linoleic acid and oleic acid were from 40.92% to 45.32% and 29.25% to 31.25% respectively. The linoleic acid content in the seed kernel from Yanan of Shaanxi was significantly higher than others. The oleic acid contents from Kashi of Xinjiang and Xunhua of Qinghai were higher than those from Jingyuan of Gansu and Yanan of Shaanxi, but no significantly different from others.
