摘要:
 为分析兰香型茶叶的特征型香气成分,采用HS-SPME-GC-MS测定了4只兰香型茶叶的香气组分,并对其共有的香气物质进行了主成分分析,建立兰香型茶叶香气质量评价模型。结果表明:兰香型茶叶的特征性香气成分有2-甲基丁醛、1-戊烯-3-醇、N-乙基吡咯、2-庚酮、6-甲基-5-庚烯-2-酮、桃金娘烷醇、1-乙基-2-甲酰吡咯、苯乙腈、氧化芳樟醇Ⅳ、水杨酸甲酯、香叶醇、柠檬醛、吲哚、法呢烯、反式-橙花叔醇15种芳香物质。由所构建的香气评价模型评判的结果与感官审评结果一致。
Abstract:
 In order to explore the unique aroma components in tea with orchid-like aroma,HS-SPME-GC-MS was employed to analyze the aroma compounds in 4 kinds of tea with orchid-like aroma.The aroma compounds contained in all tea samples were subjected to principle component analysis,from which a model was constructed to evaluate the aroma quality of tea with orchid-like aroma.The results demonstrated that the characteristic aroma components included 2-methylbutyraldehyde,1-penten-3-ol,N-ethylpyrrole,2-heptanone,6-methyl-5-hepten-2-one,l-cis-myrtanol,1-ethyl-1H-pyrrole-2-carbaldehyde,benzyl cyanide,linalool oxide Ⅳ,methyl salicylate,geraniol,citral,indole,cis-β-farnesene and nerolidol.The evaluation results by model constructed was consistent with the results of sensory evaluation.
