摘要:
 为研究酿酒葡萄果实酚成熟度与果皮质地特性之间的关系,以‘赤霞珠’葡萄为试验材料,分别对2016年和2017年不同产区、不同生长期葡萄浆果的果皮质地特性、技术成熟度和酚成熟度进行测定和分析。结果表明,除果皮厚度(Spsk)外,表征果皮硬度的参数果皮穿刺力(Fsk)、穿刺能量(Wsk)和杨氏模量(Esk)均与果实酚成熟度指标具有一定的相关性。多元线性回归分析(MLR)发现,细胞成熟指数(CMI)、种子成熟指数(SMI)以及总花色苷含量(TA)与赤霞珠葡萄果皮硬度拟合模型的决定系数(R2)均较高,表明酿酒葡萄果皮质地特性预测果实酚成熟度的可行性。
Abstract:
 The relationship between phenolic maturity and skin textural properties for wine grape was studied.The skin textural properties,technological and phenolic maturity for Cabernet Sauvignon (Vitis vinifera.) grapes harvested at different growth stages from four regions were determined and analyzed in 2016 and 2017.The results showed that certain correlations were observed between phenolic maturity and texture properties,such as skin hardness parameters,including skin break force (Fsk),break energy (Wsk),and resistance to the axial deformation (Esk).However,no significant correlation was detected between skin thickness (Spsk) and phenolic maturity.Multiple linear regression analysis (MLR) showed that the models established with cell maturity index (CMI),seed maturity index (SMI),total anthocyanins content (TA),and skin hardness had high coefficients of determination (R2).Hence,it was feasible to predict the phenolic maturity of wine grapes by skin textural properties.
