摘要:
对花椒嫩芽主要营养成分进行了测定,结果表明,每千克花椒嫩芽干重中含蛋白质87.3 g,碳水化合物21.1 g,纤维素15.8 g,脂肪8.41 g,胡萝卜素179.6 mg,维生素B,1.23mg,维生素D34.67μg;矿质元素钙、铁、磷含量分别为933、73、1 700mg;含有大量的氨基酸,所含17种氨基酸总量为244.78 g,占24.48,其中,谷氨酸、脯氨酸和丝氨酸含量最高,分别占氨基酸总量的13.8、10.8和8.8.花椒嫩芽中,蛋白质、脂肪、纤维素、钙、磷、铁含量分别是香菇的5.8、2.1
